Hot & Sour Wonton Soup

Hot & Sour Soup is a very popular spicy and tangy Indo-Chinese dish, and is made with chicken stock, soya sauce, vinegar, sambal olek, mushrooms, carrots, scallions and egg.  And, with my twist of adding chicken wontons; it is sinfully delicious.

TIP: When using soya sauce, you can avoid salt completely.

Ingredients

Adjust Servings
4 cups chicken or vegetable stock
140 gm chicken or leek wontons
1/2" julienned ginger
1 julienned carrot
6 julienned mushrooms
3 - 4 julienned scallions – leave some for garnish
1/4 cup dark soya sauce
2 tsp sambal oelek
1/4 cup vinegar
1 tsp salt & black pepper
1 tbsp tapioca starch
1 egg
2 tsp sesame oil

Directions

1.

For chicken stock – boil 2 pieces of chicken legs, remove, strain and use the clear stock.

For vegetarian stock – boil a white onion, remove the onion, strain and use the clear stock.

Cook the wontons separately in boiling water for 2 minutes, strain and keep aside.

Heat the stock in a wok or large pot over medium-high flame.

Add the ginger, carrots, mushrooms, scallions, bring the soup to a boil, and simmer for 10 minutes.

Add the soya sauce, sambal olek, vinegar, salt, pepper, and boiled wontons to the stock.

Dissolve the tapioca starch in water, and pour the slurry in the soup stirring continuously till the soup thickens.

Beat the egg and pour slowly, stirring to form silk threads.

9.

Drizzle some sesame oil, garnish with scallions and serve hot.
