Tapioca Pearls (Kheer) Pudding
Rice Pudding is a very popular Indian dessert. But this is a very unique pudding that my mother always made and I feel her warmth every time I make it. It is a creamy, aromatic dessert with a few ingredients like milk, tapioca pearls, saffron, sugar, cardamom powder, and nuts. A must….. warm or cold.
Tip: For leftovers, add a little milk before re-heating it.

| 1/3 cup tapioca pearls – medium size | |
| 4.5 cups milk | |
| 4 tsp water | |
| Few strands of saffron | |
| 3-4 tbsp sugar | |
| 1/4 tsp cardamom powder | |
| 1/2 cup sliced almonds/pistachios – reserve some for garnish |
Directions

Wash the tapioca pearls with water, strain, and soak in ½ cup milk for 30 minutes and strain.

Add water to a heavy bottom pan, add 4 cups of milk, bring to a boil, add saffron and cook for 10 minutes, stirring in intervals.

Add tapioca pearls, reduce heat and keep stirring in intervals, so pearls don’t stick to the bottom; until the milk is reduced to 3 cups and the pearls are soft and translucent.

Then add sugar, cardamom powder, and nuts; give it a good stir and cook for 5 minutes.

Garnish with some nuts and serve hot.
