Ingredients

Soft flour medium Tortillas
1 large eggplant
Salt, black & red pepper flakes to taste
½ cup olive oil
1 cup store bought pesto sauce
1 cup kale leaves
16 oz fresh mozzarella balls
½ cup fresh grated parmesan cheese
Basil leaves for garnish

Directions

1.

Wash and dry eggplant. Remove stem and cut into ½" discs. Add salt, black and red pepper flakes and oil.

Pan fry or grill eggplants till golden. Place on paper towel to remove excess oil.

Pre-heat oven to 450°F. Arrange tortillas on a baking tray lined with parchment paper.

Tear the mozzarella cheese into quarters.

Spread pesto sauce on each tortilla generously, ¼" away from the edges. Brush edges with olive oil.

Place eggplants and torn kale leaves around the tortilla and top with mozzarella / parmesan cheese.

Bake for 5 to 7 minutes or until the bottom of tortillas are crisp and cheese has melted.
