Bombay Wraps
Not your average wrap. These heavenly Bombay Wraps will be the star of your next get-together. You can BBQ the chicken and have everyone assemble their own wraps. Easy and a favorite amongst all.
TIP: You can use Paneer instead of Chicken.

| 500 gm bite-size boneless chicken | |
| 2 tbsp olive oil | |
| 3 tbsp tandoori masala | |
| Salt to taste | |
| 2 tsp ginger/garlic paste | |
| 1/2 cup yogurt | |
| 2 tsp lemon juice | |
| 3 tbsp olive oil | |
| 1 thinly sliced onion | |
| 3 finely chopped green chilies | |
| 1 thinly sliced green pepper | |
| Cooked chicken | |
| 2 tbsp lemon juice | |
| 1/2 cup finely chopped cilantro | |
| 6 ” white tortillas | |
| 2 beaten eggs | |
| 2 tbsp water | |
| 2 tsp olive oil |
Yogurt Chutney
| 3-4 tbsp yogurt | |
| 1 cup cilantro chutney |
Directions

In a bowl, mix oil, tandoori masala, and salt, add g/g paste, yogurt, and mix well.

Add chicken, and lemon juice, massage well and leave for one hour.

Stir-fry the chicken until cooked or BBQ them on skewers.

Stir-fry onions, green chilies, and green peppers for 2 minutes.

Add chicken, lemon juice, and cilantro, and mix well.

Beat eggs with water.

Brush the tortillas with the egg mixture on both sides.

Brush a little oil on a non-stick pan and fry the tortillas for one minute on each side.

Assembly

Place filling on the tortilla and drizzle some chutney on it.

Fold sides in, and roll tightly, enclosing the filling like a spring roll.

Cut diagonally into halves and serve with the chutney.
