Ingredients

1 package (50) TYJ spring roll wrappers - small size
1 kg extra-large tail-on deveined shrimps
Salt & pepper to taste
1 egg
1 tbsp water
Canola oil for frying
1 bottle of store bought sweet chili sauce

Directions

Separate the spring roll wrappers and cover with a damp cloth.

Beat the egg.

Leave the tails on as handles for the shrimp. Season with salt and pepper. Make insertions on the back of the shrimp to make them straight and wipe them to remove excess water.

Take a wrapper and fold over the right side, to make a flat edge. Place shrimp on the wrapper with the tail sticking out, fold over the bottom, tuck the top, and then roll tightly towards the other end of the wrapper.

Brush egg wash on the end of the wrapper to seal. Repeat.

Heat oil in a small wok until the temperature reaches 350ºF (180°C).

Deep fry (do not overcrowd) for 1-2 minutes until golden.

Remove them on a paper towel to remove excess oil.
