Crème Caramel

The classic French Crème Caramel is a custard dessert with a layer of clear caramel sauce.  It is made with just a few simple ingredients, milk, eggs, and sugar. A great make-ahead custard dessert for all. 

TIP: Garnish with some whipping cream – optional.

1/2 cup sugar
3 tbsp water
Custard
2 cups milk
1/4 cup sugar
1 tsp vanilla extract
3 eggs lightly beaten

Directions

Preheat the oven to 350 F (180 C).

In a saucepan cook the sugar and water until it is a dark golden brown.

Quickly pour the caramel into the bottom of 6 (125 ml) or 4 (150ml) ramekins.

Custard

Bring the milk to a boil, add sugar and vanilla essence, cook for 5 mins. and cool.

Whisk the eggs, add to the milk and mix well.

Strain the mixture for a smooth texture and gently pour into the ramekins.

Prepare a water bath in a baking dish, fill hallway up with boiling water and add the ramekins to it.

Cover pan with foil paper and bake for 30 to 35 minutes, or until a knife inserted halfway comes out clean.

Remove ramekins and refrigerate for 3 hours.

Carefully run a knife around the inside edge of the ramekin, place a plate on it, invert on the plate and serve.
